December Quick Dishes
We all know that it’s a busy time. What’s better than a warm dinner cooked at home. No time for that sort of thing? I will be inserting some quick and easy recipes for you to try this month. They were passed to me, so now I pass them to you.
Pulled Pork Sandwiches
- Pork Loin ( Love the Costco price on this meat)
- Place in Crock Pot on Low
- Sprinkle with Garlic Salt, Rub on 1 T. of minced garlic, and sprinkle some Montreal Steak Seasoning.
- Add 3/4 cup of water, pour over meat.
- Cook on low all day. The house will smell amazing!
- After it is cooked, take 2 forks and shred the meat.
- Add BBQ sauce and Buns and you have a quick and easy meal.
To save time cook 2 pork loins at one time. ( they come 2 to a package at Costco) Add BBQ sauce to individual sandwiches, and save left over meat for other recipes.

And, best news, Pork really is the other white meat. These pork loins are 98% fat free meat!
Impossible Taco Pie
Preheat over to 400
- Grease a 10 inch pie dish
- Cook 1 pound ground beef or turkey with one chopped onion, till brown, drain ( You can also used left over pulled pork from the crock pot day)
- Add 1 packet taco seasoning mix
- Spread mixture in bottom of pie dish
- Top with 4 oz. green chilies, drained.
- Gently mix together 3/4 cups Bisquick, 1 1/4 cup milk and 3 eggs; pour into pie dish, over mixture and chilies.
Bake for 25 minutes
- Top with 2 sliced tomatoes and 1 cup cheddar or Jack cheese.
- Bake for 8-10 minutes, till golden brown and knife inserted in center comes out clean.
- Serve with shredded lettuce, sliced tomatoes, salsa, sour cream and avocado.
One last note: Impossible Taco Pie converts well into a vegetarian dish. Just substitute black beans for the ground beef in the Taco Pie.
