All week I have been reflecting on WONDERFUL COUNSELOR. I have made a practice of saying over and over as a form of prayer and praise, LORD, you are WONDERFUL. Wonderful…Wonderful…Wonderful. And, at other times, LORD, you give me the right counsel and advise. Counselor…Counselor…Counselor.
Amazing how focus like this, on two little, but very BIG truths, change the mindset completely! And, I have to repeat…COMPLETELY!
Like many of you, I have been busy….several parties, that I hosted, just this week alone! I wanted to share a very easy, make ahead, party dish for you.
Chicken and Broccoli Au Gratin( aka holiday comfort food)
( I double this)
- 2 packages 10 oz frozen broccoli, or the fresh equivalent ( I use fresh and microwave)
- 2 whole chicken breasts ( cooked) ( Get boneless skinless breasts to make it easy)
- 1/4 c. butter, 1/4 c. flour., 1/2 t. salt
- 1 c. chicken broth ( reserved from cooking chicken)
- 1/2 c. cream
- 1c. shredded cheddar cheese
- 2 T. dry white wine
- 1/2 t. dry mustard
Cook chicken with a onion, water, salt and pepper until tender ( cover with water and boil at med heat)
Cook broccoli tender/still a bit firm
Arrange broccoli on bottom of 9 inch baking dish
Slice chicken in thin pieces, arrange over broccoli
In sauce pan melt butter. Blende in flour, dry mustard and salt and pepper. Stir in chicke broth and cream. Cook over medium heat stiring constantly, until sauce thickens and bubble…1 minute. Add cheese and stir until melted. Stir in wine. Remove from heat. Pour over chicken and broccoli. Sprinkle lightly with fresh grated parmesan cheese and bake 25 min. at 350
I served this ( triple receipe) at a dinner party last night. I made ahead in the morning, refrigerated 3 9×13 glass pans all day. It was served with tossed green salad/balsamic dressing…fingerling potatoes. Delicious. This doesn’t have to be for a party, but can be a dish you make ahead to serve for your family during a busy week. If your kids like mac and cheese, they will love this, even with the green stuff!
